Method

Chicharron de Pollo (Chicken Chunks)

    Prepare the Chicken

    Cut the chicken thighs into bite-sized chunks and place them in a bowl.

    Season the Chicken

    Add garlic powder, onion powder, paprika, salt, and black pepper to the chicken. Mix well to coat all the pieces evenly.

    Fry the Chicken

    Heat vegetable oil in a deep skillet over medium-high heat. Once hot, add the chicken chunks in batches, frying until golden brown and cooked through, about 5-7 minutes per batch. Remove and drain on paper towels.

Arroz y Habichuelas (Rice and Beans)

    Sauté the Aromatics

    In a large pot, heat a little oil over medium heat. Add chopped onion and minced garlic, cooking until softened, about 3-4 minutes.

    Add Rice and Liquid

    Stir in the long-grain rice, then add vegetable broth or water. Bring to a boil.

    Cook Rice

    Reduce heat to low, cover, and simmer for 15 minutes. After 15 minutes, add drained black beans, cumin, and salt. Stir gently, cover, and cook for an additional 5 minutes.

Ensalada (Salad)

    Prepare the Vegetables

    In a large bowl, combine chopped lettuce, diced tomato, and sliced cucumber.

    Dress the Salad

    In a small bowl, whisk together olive oil and vinegar. Drizzle over the salad and toss gently. Season with salt and black pepper to taste.

Maduros (Sweet Plantains)

    Slice the Plantains

    Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.

    Fry the Plantains

    Heat vegetable oil in a skillet over medium heat. Fry the plantain slices in batches until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.

Serving

    Assemble the Plate

    On a plate, serve a portion of chicharron de pollo, rice and beans, sweet plantains, and salad. Include 3 cans of soda on the side.
