Marinate the Pork
Make shallow cuts in the pork shoulder and rub the marinade all over the meat. Cover and refrigerate for at least 4 hours, preferably overnight.

Roast the Pork
Preheat the oven to 350°F (175°C). Place the marinated pork in a roasting pan and cover with aluminum foil. Roast for 3-4 hours, removing the foil in the last hour to allow the skin to crisp up. Ensure it reaches an internal temperature of 185°F (85°C).

Sauté Vegetables
In a large pot, heat olive oil over medium heat. Add chopped onion, red bell pepper, and minced garlic. Sauté until onions are translucent.

Add Beans
Once the rice is cooked, gently fold in the black beans. Heat through for another 5 minutes and adjust seasoning if necessary.
Maduros (Sweet Plantains)

Slice the Plantains
Peel the sweet plantains and slice them diagonally into 1-inch thick pieces.

Fry the Plantains
In a skillet, heat vegetable oil over medium heat. Add the plantain slices and fry until golden brown on both sides, about 3-4 minutes each side. Remove and drain on paper towels.
Ensalada (Salad)

Prepare the Salad
In a large bowl, combine chopped lettuce, diced tomato, and sliced cucumber.

Dress the Salad
Drizzle olive oil and vinegar over the salad. Season with salt and black pepper to taste. Toss gently to combine.
Soda

Serve the Soda
Chill the cans of soda in the refrigerator, and serve 3 cans with the meal.
