Preparation of Base

    Boil Plantains

    Peel the green plantains and cut them into 1-inch pieces. In a large pot, bring 4 cups of water to a boil. Add the plantain pieces and 1 tsp salt. Boil for about 20-25 minutes or until the plantains are tender.

    Drain and Mash

    Once boiled, drain the plantains and let them cool slightly. In a large bowl, mash the plantains until smooth, adding a bit of salt to taste. Set aside.

Preparation of Filling

    Cook Sausage and Salami

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the Dominican sausage and salami, cooking until browned and cooked through, about 5-7 minutes.

    Scramble Eggs

    Crack the two eggs into a bowl, whisk them, and add a pinch of salt and black pepper. Pour the eggs into the skillet with the sausage and salami, and scramble until fully cooked.

    Add Cheese

    Once the eggs are scrambled, add the cheese to the skillet, stirring it into the mixture until melted and well combined. Remove from heat.

Assembly

    Form the Golpes

    Take a portion of the mashed plantains and flatten it in your palm to create a small patty. Place a spoonful of the sausage, salami, egg, and cheese mixture in the center of the patty. Fold the edges over to encase the filling and form a ball.

    Repeat

    Repeat the process until all the plantain mixture is used up. You should have 3-4 filled golpes.

    Fry the Golpes

    Heat a bit more olive oil in the skillet over medium heat. Fry each golpe for about 3-4 minutes on each side until golden brown and crispy.
