Pollo Guisado (Chicken Stew)

Brown the Chicken
Add the chicken pieces to the pot and brown them on all sides.

Add Remaining Ingredients
Add the chopped tomato, chicken broth, cumin, oregano, salt, black pepper, and bay leaf. Bring to a boil.

Simmer
Reduce heat to low, cover, and let simmer for about 45 minutes or until the chicken is cooked through.
Arroz y Habichuelas (Rice and Beans)

Cook the Rice
Add the long-grain white rice and stir for about 2 minutes. Then add the water, salt, and red kidney beans. Bring to a boil.

Simmer
Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.
Ensalada (Salad)

Prepare the Salad
In a large bowl, combine chopped lettuce, diced tomato, and sliced cucumber.

Dress the Salad
Drizzle with olive oil and vinegar, then season with salt and black pepper to taste. Toss to combine.
Maduros (Sweet Plantains)

Slice Plantains
Peel the ripe plantains and slice them diagonally into 1-inch pieces.

Fry the Plantains
In a large skillet, heat vegetable oil over medium heat. Fry the plantain slices until golden brown on both sides, about 2-3 minutes per side.

Drain and Serve
Remove the fried plantains and place them on paper towels to drain excess oil before serving.

Chill the cans of soda in the refrigerator and serve cold with the meal.
