Method

Pollo al Horno (Baked Chicken)

    Prepare the Chicken

    Preheat the oven to 375°F (190°C). Rinse the chicken and pat it dry with paper towels.

    Season the Chicken

    In a small bowl, mix olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Rub this mixture all over the chicken, ensuring it is well coated.

    Bake the Chicken

    Place the chicken in a roasting pan and bake in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Arroz y Habichuelas (Rice & Beans)

    Cook the Rice

    In a medium pot, bring 2 cups of vegetable broth to a boil. Add 1 cup of white rice and 1 tsp of salt. Stir, cover, and reduce heat to low. Cook for about 18-20 minutes until rice is tender.

    Prepare the Beans

    In a skillet, heat 1 tbs of olive oil over medium heat. Add chopped onion and minced garlic, sautéing until soft. Stir in the canned black beans, cumin, and salt. Cook until heated through.

    Combine Rice and Beans

    Once the rice is cooked, fluff it with a fork and combine it with the prepared black beans in the skillet. Mix well and serve.

Ensalada (Salad)

    Prepare the Salad

    In a large bowl, combine shredded romaine lettuce, diced tomato, and sliced cucumber.

    Dress the Salad

    In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper. Pour the dressing over the salad and toss to combine.

Maduros (Sweet Plantains)

    Prepare the Plantains

    Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.

    Fry the Plantains

    In a large skillet, heat vegetable oil over medium heat. Add the sliced plantains and fry until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.

Soda

    Serve the Soda

    Chill the soda cans in the refrigerator before serving. Serve alongside the meal.
