Spicy Mango Glazed Wings

    Prep the wings

    Pat the chicken wings dry with paper towels. If whole wings were purchased, separate into drumettes and flats and discard tips or save for stock.

    Season & dry

    In a large bowl, toss wings with kosher salt, black pepper and baking powder until evenly coated. The baking powder helps crisp the skin during cooking.

    Cook the wings

    Two cooking options: Oven (recommended): Preheat oven to 220°C (425°F). Arrange wings on a wire rack set over a rimmed baking sheet in a single layer. Lightly brush or spray with 1–2 tbs neutral oil. Bake 40–45 minutes, turning once at 25 minutes, until skin is deep golden and crisp and internal temperature reaches 75°C (165°F). Air-fryer: Preheat to 200°C (400°F) and cook in batches 20–25 minutes, shaking/turning halfway. Shallow fry: Heat 1/2–1 cup oil in a deep skillet to 180°C (350°F) and fry wings in batches 8–10 minutes until golden and crisp; drain on paper towels.

    Make the mango glaze

    While wings cook, place diced mango (or canned pulp), honey, sriracha, soy sauce, grated ginger, minced garlic, lime juice and red pepper flakes in a blender or food processor. Pulse until mostly smooth but with a little texture (about 20–30 seconds). Transfer to a small saucepan and simmer over medium-low heat 6–8 minutes, stirring occasionally.

    Thicken & balance

    Taste the glaze and adjust: add extra honey for sweetness, lime for brightness or sriracha for heat. If you want a thicker, glossy glaze, mix cornstarch with cold water to make a slurry and whisk into simmering glaze. Cook 1–2 minutes more until thickened. Remove from heat.

    Glaze the wings

    Place the cooked wings in a large bowl. Pour 3/4 of the warm mango glaze over the wings and toss gently to coat evenly. Reserve the remaining glaze for drizzling or serving on the side. If desired, return coated wings to a hot oven or under a broiler for 1–2 minutes to set the glaze—watch carefully to avoid burning.

    Garnish & serve

    Transfer glazed wings to a serving platter. Sprinkle with chopped cilantro or scallions. Serve immediately with reserved glaze and the optional sides/sauces you chose.

Optional Sides & Sauces

    Salsa rosada

    If making quick salsa rosada, mix 3 tbsp ketchup with 2 tbsp mayonnaise and 1 tsp lime juice; season to taste. Chill until serving.

    Satay (peanut) sauce

    Heat prepared satay sauce gently in a small saucepan or microwave until warm. If making from scratch, combine 1/3 cup peanut butter, 1 tbsp soy sauce, 1 tbsp honey, 1 tsp lime juice and warm water to thin; heat and whisk until smooth.

    Fries

    Bake or fry fries according to package instructions or your preferred method until golden and crisp. For fresh fries: toss cut potatoes with a little oil and salt and roast at 220°C (425°F) for 25–35 minutes, turning midway.

    Cheese fries

    For cheese fries, place cooked fries on an oven-safe tray, sprinkle shredded cheddar evenly and return to 200°C (390°F) oven for 3–5 minutes until cheese melts, or drizzle warm cheese sauce just before serving.

    Yellow rice

    Reheat cooked yellow rice in microwave or on stovetop with a splash of water; fluff with fork and serve alongside wings.

    Half & half (fries order)

    If customer requests half plain and half cheese fries, divide the cooked fries on the serving tray, top one half with cheese sauce or shredded cheese and return to oven briefly to melt.
