    Preheat and prepare

    Preheat oven to 425°F (220°C) if baking fries. Line a large baking sheet with parchment or lightly oil it. If frying, heat oil in a deep skillet or fryer to 350°F (175°C).

    If using frozen fries: spread fries in a single layer on the prepared sheet, toss with 1 tbs vegetable oil, 1 tsp salt and 1/2 tsp black pepper. Bake for 20–28 minutes, turning once halfway, until golden and crisp. If frying: fry in batches 4–5 minutes until golden, drain on paper towels and season immediately with salt and pepper.

    Season the chicken

    In a medium bowl combine the chicken pieces with 1 tbs olive oil, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne pepper, 3/4 tsp kosher salt and 1/4 tsp black pepper. Toss to coat evenly.

    Cook the chicken

    Heat a large nonstick skillet over medium-high heat. Add the seasoned chicken in a single layer (work in batches if needed). Cook 4–6 minutes, stirring occasionally, until the pieces are browned and cooked through (internal temperature 165°F / 74°C). Remove from heat and set aside. If using leftover cooked chicken, reheat briefly with a splash of oil and a pinch of seasoning.

Cheese & Assembly

    Assemble the loaded fries

    When fries are hot and crisp, transfer them to an oven-safe platter or leave on the baking sheet. Scatter the cooked chicken evenly over the fries. Sprinkle the shredded cheddar and Monterey Jack (or mozzarella) evenly on top. Add chopped bacon if using.

    Melt the cheese: place the assembled fries under the broiler on high for 1–2 minutes, watching closely, until the cheese is melted and bubbling. Alternatively, return to a 400°F (200°C) oven for 4–6 minutes until cheese melts.

Sauces & Garnish

    Finish and garnish the fries: remove the loaded fries from the oven. Drizzle ranch dressing over the top and dot with sour cream or serve sour cream on the side. Scatter sliced green onions, pickled jalapeños and chopped cilantro over the hot cheese. Squeeze lime wedges over before eating and offer hot sauce if desired.
