Method
Chicken & Marinade

Prepare chicken
Pat the chicken thighs dry with paper towels. If using large pieces, score the skin lightly or butterfly boneless thighs for even cooking.

Make marinade
In a bowl, combine vegetable oil, lime juice, smoked paprika, cumin, chili powder, minced garlic, brown sugar (or honey), kosher salt and black pepper. Whisk until combined.

Coat the chicken evenly with the marinade, massaging it under the skin where possible. Cover and refrigerate for at least 30 minutes, ideally 2–4 hours. Remove from fridge 20 minutes before grilling to come toward room temperature.

Preheat grill
Preheat a gas or charcoal grill to medium-high (about 200–230°C / 400–450°F). Oil the grates to prevent sticking.

Grill chicken
Place chicken skin-side down on the hottest part of the grill. Grill 6–8 minutes until skin is nicely charred, then flip and move to indirect heat. Continue grilling 8–12 minutes more (depending on thickness) until internal temperature reaches 74°C (165°F). For bone-in allow the longer time; for boneless check earlier. Avoid constant flipping—let it develop good color.

When cooked, transfer chicken to a tray and tent loosely with foil. Rest 5–7 minutes before serving so juices redistribute.

Fries (oven or deep-fry)
If using frozen fries, bake or fry according to package instructions until golden and crisp. For fresh cut, toss potato sticks with 1–2 tbs oil and 1 tsp salt and bake at 220°C (425°F) for 25–30 minutes, turning once, or deep-fry in 180°C oil until golden (4–6 minutes).

Yellow rice
If not pre-cooked, make yellow rice by sautéing 1 small diced onion in 1 tbs oil until translucent, add 1 cup long-grain rice and toast 1 minute, add 2 cups chicken stock, 1/2 tsp turmeric or annatto for color, salt to taste, bring to a boil then simmer covered 15–18 minutes until liquid is absorbed. Fluff with a fork.

Serve with sauces
Warm store-bought saté sauce or make the saté below. Spoon salsa rosada in a small bowl for dipping. Offer both on the side so guests can choose: salsa rosada, saté, or both.

Garnish & finish
Squeeze a lime wedge over the rested chicken, sprinkle chopped cilantro, and serve with chosen sides (fries, cheese fries, yellow rice).
Saté Sauce (if making)

In a small saucepan over low heat, combine peanut butter and coconut milk. Stir until smooth and warmed through. Add soy sauce, brown sugar, lime juice and chili flakes. Simmer gently 2–3 minutes, adjust thickness with extra coconut milk or water. Taste and adjust salt/sweet/acid balance. Keep warm until serving.
Salsa Rosada (if making)

Whisk together mayonnaise, ketchup, hot sauce and lime juice until smooth. Chill until ready to serve.
