Prep chicken
Trim any excess fat from the chicken breasts and pat both the breasts and wings dry with paper towel. If breasts are thick, butterfly or flatten to an even thickness (about 1/2"/1.2 cm) so they grill evenly.

Marinate
In a large bowl combine olive oil, soy sauce, lemon juice, minced garlic, smoked paprika, ground cumin, onion powder, black pepper and salt. Reserve 2 tbs of the marinade for basting. Add the chicken breasts and wings, turning to coat. Cover and refrigerate 30 minutes to 2 hours (minimum 30 minutes for flavor).

Preheat grill or oven
Preheat grill to medium-high (about 400°F/200°C) or set oven to 220°C (425°F) with rack in upper third if using broiler/grill pan. If using a charcoal or gas grill, oil the grates.

Grill chicken breasts
Remove breasts from marinade and let excess drip off. Place on the grill and cook 4–6 minutes per side, flipping once, until internal temperature reaches 74°C (165°F) and juices run clear. Baste once with reserved marinade halfway through cooking, then discard any remaining marinade.

Cook wings
Arrange wings on the grill or on a sheet pan under the broiler. Grill or broil, turning every 5–7 minutes, until skin is crisp and internal temperature reaches 74°C (165°F), about 20–25 minutes total depending on size. If you prefer extra char, increase heat during the last 2–3 minutes. If using oven, toss wings with a little oil and spread in a single layer; roast at 220°C (425°F) for 25–30 minutes, flipping halfway.

Rest
Transfer cooked breasts and wings to a clean plate, tent loosely with foil and rest for 5 minutes to retain juices.

Fries or Cheese Fries
If using frozen fries, bake or deep-fry according to package directions until golden and crispy. For cheese fries: place cooked fries on an oven-safe tray, sprinkle grated cheddar evenly over fries and place under broiler for 1–2 minutes until cheese melts and bubbles. Remove carefully.

Yellow Rice
If using pre-cooked yellow rice, reheat gently in a saucepan with 1 tbs butter and a splash of water over medium-low heat until hot, fluff with a fork. If cooking from dry rice: cook 1 cup long-grain rice with 2 cups water, 1/2 tsp turmeric, pinch of salt and 1 tbs butter; simmer covered 15–18 minutes until done, then fluff.

Salsa Rosada and Satay
If using store-bought sauces, transfer to small serving bowls. To make quick salsa rosada: mix 1/2 cup mayonnaise with 2–3 tbs ketchup, 1 tsp lemon juice and a pinch of smoked paprika; adjust to taste. For satay: warm peanut satay sauce gently in a small saucepan, thin with a splash of water if too thick and stir until glossy.

Pickles / Slaw
Serve pickles or a small scoop of slaw cold as a bright contrast to the grilled chicken.

Slice the rested chicken breasts into strips. Arrange a mix plate: 1 breast (sliced) and half the wings (or portion to guest preference). Add chosen sides — fries (or cheese fries), yellow rice or half & half — and place small bowls of salsa rosada and satay on the plate for dipping.

Garnish the chicken and wings with chopped parsley, place lime wedges on the side and serve immediately while hot.
