    Prepare the Cabbage

    Preheat your oven to 400°F (200°C). Cut the Savoy cabbage into quarters and remove the core. Cut each quarter into thick slices.

    Roast the Cabbage

    Toss the cabbage slices with olive oil and salt. Arrange them on a baking sheet in a single layer. Roast in the oven for 25-30 minutes until golden brown and tender, flipping halfway through.

    Make the Cashew Puree

    While the cabbage is roasting, soak the cashews in hot water for about 15 minutes. Drain and transfer to a blender. Add 1 cup of fresh water and blend until smooth and creamy.

    Prepare the Brown Butter

    In a small saucepan, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown and has a nutty aroma, about 5-7 minutes. Be careful not to burn it.

    Combine and Serve

    Once the cabbage is roasted, remove it from the oven. Plate the cabbage, drizzle with brown butter, and add dollops of cashew puree. Garnish with finely chopped preserved lemon and black pepper to taste.
