    Prepare the Celery Root

    In a small pot, add diced celery root and cover with water. Boil until tender, about 15 minutes. Drain and mash until smooth. Season with salt and pepper, and set aside.

    Make Brown Butter Grapefruit Cream

    In a saucepan, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown and has a nutty aroma. Remove from heat and add grapefruit juice and heavy cream. Stir until well combined and season with salt.

    Prepare the Halibut

    Preheat the oven to 375°F (190°C). Season the halibut fillets with salt and pepper. In a large skillet, heat olive oil over medium heat. Place the grated potatoes on top of the halibut, pressing gently to adhere.

    Cook the Halibut

    Place the halibut fillets in the skillet, potato-side down, and cook for 4-5 minutes or until the potatoes are golden brown. Carefully flip the fillets and transfer the skillet to the preheated oven. Bake for an additional 10-12 minutes or until the fish is cooked through.

    Serve

    Plate the mashed celery root, top with the potato-crusted halibut, and drizzle with brown butter grapefruit cream. Garnish with sliced pear and serve immediately.
