Cooking Duck Breast

Prepare the Duck
Score the skin of the duck breast in a crosshatch pattern without cutting into the meat. Season with salt and black pepper.

Sunchoke Puree

Cook the Sunchokes
In a pot, cover sunchokes with water and boil until tender, about 15-20 minutes. Drain.

Blend the Puree
In a blender, combine cooked sunchokes, cream, butter, salt, and white pepper. Blend until smooth and creamy. Adjust seasoning if needed.
Bacon Roasted Brussels Sprouts

Prepare and Roast
Preheat the oven to 400°F (200°C). Toss Brussels sprouts and chopped bacon with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until crispy.
