Preparation and Cooking

Marinate the Chicken
In a bowl, soak the chicken breasts in buttermilk for at least 1 hour or overnight in the refrigerator for better flavor.

Prepare the Coating
In a shallow dish, mix together the flour, cornstarch, salt, pepper, garlic powder, onion powder, and paprika.

Coat the Chicken
Remove the chicken from the buttermilk, letting the excess drip off. Dredge each piece in the flour mixture, ensuring they are fully coated. Shake off any excess.

Fry the Chicken
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the coated chicken breasts. Fry for about 5-7 minutes on each side, until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Sriracha Aioli
In a small bowl, mix the mayonnaise and sriracha together until well combined.

Build the Sandwich
Toast the burger buns if desired. Spread the sriracha aioli on the bottom bun, add the fried chicken, top with onion jam, lettuce, and tomato slices. Cap with the top bun.
