    Prepare the Seafood

    Rinse all seafood thoroughly under cold water. Shuck the oysters and clams, and set them on ice. Cook the mussels in boiling water for about 5 minutes until they open, then cool and set aside.

    Cook the Shrimp and Lobster

    Boil the jumbo shrimp for about 3-4 minutes until they turn pink. For the lobster tails, steam for about 8-10 minutes until cooked through, then slice in half lengthwise.

    Assemble the Torre de Mariscos

    On a large platter or stand, arrange the oysters, mussels, shrimp, lobster tails, crab fingers, and clams in an aesthetically pleasing manner. Spoon the ceviche canario and campechana in small bowls and place them on the platter.

    Serve with Dipping Sauces

    Place small bowls of costeño aioli, canario mignonette, and cocktail sauce around the seafood tower for dipping. Serve immediately.
