Flautas de Pato Ingredients

Method

Preparation Directions

  1. 1

    Prepare the Duck

Season the duck breasts with salt and pepper. In a pan over medium heat, cook the duck for about 6-8 minutes on each side until crispy and cooked through. Let it rest before shredding the meat.

  2. 2

    Make Tomatillo Salsa

In a pot, boil the tomatillos until soft. Blend them with jalapeño, garlic, onion, cilantro, and lime juice until smooth. Season with salt and pepper to taste.

  3. 3

    Cook the Rice

Cook the white rice according to package instructions. Fluff and set aside.

  4. 4

    Assemble the Flautas

Warm the tortillas slightly to soften. Place shredded duck in the center and roll tightly to form flutes. Secure with toothpicks if necessary.

  5. 5

    Fry the Flautas

In a deep skillet, heat vegetable oil over medium-high heat. Fry the flautas until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

  6. 6

    Poach the Eggs

In a pot of simmering water, poach the eggs until the whites are firm and the yolks are still runny, about 3-4 minutes.

  7. 7

    Serve

Plate the flautas with a side of rice, top with poached eggs, drizzle with tomatillo salsa, and sprinkle with crumbled queso fresco.
