    Grill the Beef

    Season the beef with olive oil, salt, and black pepper. Grill over medium-high heat for about 5-7 minutes on each side or until cooked to your desired doneness. Remove from the grill and let it rest for 5 minutes before slicing thinly.

    Prepare the Tortilla

    Warm the large corn tortillas on a skillet over medium heat for about 1-2 minutes until they're soft and pliable.

    Assemble the Tlayuda

    On one half of each tortilla, layer the sliced grilled beef, queso Oaxaca, and yellow Oaxacan chiles. Fold the tortilla over to enclose the filling.

    Heat the Tlayuda

    Return the assembled tlayudas to the skillet and cook for another 2-3 minutes on each side until the cheese melts and the tortilla is crispy.

    Serve

    Slice the tlayudas in half and plate them. Drizzle with pasilla and ancho sauce and serve alongside a cup of white rice.
