    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and cook for about 40-50 minutes until tender. Remove, let cool, and slice into pieces.

    Smoke the Octopus

    Preheat your smoker or grill to a medium heat. Place the sliced octopus on the grill grates and smoke for 15-20 minutes, infusing with flavor.

    Cook the Sausage

    In a skillet over medium heat, cook the Mexican sausage until browned and cooked through, about 5-7 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same skillet, add diced onion and bell peppers. Sauté until softened, about 5-7 minutes. Add in diced potatoes and cook until they are tender, about 10 minutes.

    Add the smoked octopus and cooked sausage to the skillet with vegetables. Stir in the chipotle-tomatillo salsa and cook for an additional 5 minutes to blend flavors.
