    Prepare the Ribs

    Pat the pork ribs dry with paper towels. In a bowl, mix olive oil, garlic powder, paprika, cumin, salt, and black pepper. Rub this mixture all over the ribs, ensuring they are well coated. Allow them to marinate for at least 1 hour or ideally overnight in the refrigerator.

    Prepare the Grill

    Soak the wood chips in water for at least 30 minutes. Preheat your grill to medium heat. If using a charcoal grill, arrange the coals on one side and place the soaked wood chips on top of the coals.

    Cook the Ribs

    Place the ribs on the cooler side of the grill (indirect heat) and cover. Cook for about 2.5 to 3 hours, or until the meat is tender and pulls away from the bone. Add more wood chips as needed to maintain smoke.

    Rest and Serve

    Once cooked, remove the ribs from the grill and let them rest for 10-15 minutes before slicing. Serve warm with pickled onions on the side.
