Chilaquiles Ingredients

Method

Preparation Directions

  1. 1

    Prepare the Eggs

In a non-stick skillet, cook the eggs sunny-side-up over medium heat until the whites are set and the yolks are still runny. Season with salt and pepper to taste. Set aside.

  2. 2

    Heat the Salsa

In a large skillet, warm the tomatillo salsa over medium heat. Add the shredded chicken and stir until heated through.

  3. 3

    Combine Totopos

Add the totopos (tortilla chips) to the skillet with the salsa and chicken. Gently toss to coat the chips without breaking them.

  4. 4

    Serve

Divide the chilaquiles mixture onto plates. Top each serving with a sunny-side-up egg, and garnish with chopped cilantro, avocado slices, and a dollop of sour cream. Serve with lime wedges on the side.
