For the Chicharrón de Calamar

Method

Frying the Squid

  1. 1

    Prepare the Squid

In a bowl, combine the cleaned squid rings with salt and black pepper. Let it sit for about 10 minutes to absorb the flavors.

  2. 2

    Prepare the Breading

In a separate bowl, combine the all-purpose flour and cornstarch. Dredge the marinated squid rings in the flour-cornstarch mixture until fully coated.

  3. 3

    Fry the Squid

Heat the vegetable oil in a deep pan over medium-high heat. Once the oil is hot, add the coated squid rings in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

  4. 4

    Crispy Garlic and Serrano

In the same oil, add minced garlic and sliced serrano peppers. Fry until the garlic turns golden and crispy, then remove and drain.
