    Prepare chocolate

    Place the finely chopped chocolate in a medium heatproof bowl. Set aside near the stove.

    Heat cream

    Pour the heavy cream into a small saucepan with the pinch of salt and the optional corn/golden syrup. Heat over medium until it just begins to simmer and small bubbles form at the edges (do not boil). Remove from heat immediately.

    Make ganache

    Pour the hot cream over the chopped chocolate. Let sit undisturbed for 2 minutes to soften the chocolate. Using a spatula, gently stir from the center outward in small circles until the chocolate is fully melted and the mixture is smooth and glossy. If some chocolate remains unmelted, microwave the bowl in 10-second increments, stirring between each, until smooth (total additional time usually <30 seconds).

    Add butter

    Stir in the butter pieces until fully incorporated and the ganache is shiny. Taste and adjust salt if needed.

    Chill ganache

    Cover the bowl with plastic wrap, pressing the wrap directly onto the ganache surface to prevent a skin. Refrigerate until firm enough to scoop and roll, about 1.5–2 hours (or place in the freezer for 20–30 minutes, checking frequently).

Forming and coating

    Prepare coatings

    While ganache chills, measure and place cocoa powder, chopped nuts, confectioners' sugar, and any sprinkles into separate shallow bowls or plates for rolling.

    Scoop ganache

    Using a small cookie scoop or a teaspoon, portion out rounded balls of chilled ganache (about 1 tablespoon / 15 g each). Work quickly so the ganache warms minimally in your hands. If it becomes too soft, return the bowl to the refrigerator for 10–15 minutes.

    Roll truffles

    Lightly butter or dust your hands with a little cocoa or confectioners' sugar to prevent sticking. Roll each portion between your palms to form a smooth ball. Place formed truffles on a parchment-lined tray.

    Coat truffles

    Roll each truffle in your chosen coating(s): cocoa powder for a classic finish, chopped toasted nuts for crunch, confectioners' sugar for a sweet finish, or sprinkle/chopped freeze-dried fruit for color. Gently tap off excess coating and return truffles to the tray.

    Set

    Once coated, chill the truffles for 15–30 minutes to set the coating and firm them up for serving. Store in an airtight container in the refrigerator for up to 10 days or freeze up to 1 month (thaw in refrigerator before serving).
