Prepare and Cook

    Bring water to a boil

    Pour 4 cups of water into a medium saucepan and bring to a rolling boil over high heat.

    Add salt and edamame

    Once boiling, add 1 teaspoon coarse sea salt to the water, then add 1 cup frozen edamame in pods. Return to a boil.

    Cook until tender

    Boil the edamame for 3 to 5 minutes until pods are bright green and beans inside are tender but still slightly firm. For firmer beans keep toward 3 minutes; for softer, toward 5 minutes.

    Drain and shock (optional)

    Drain the edamame in a colander and, if you want to stop cooking and keep color, briefly rinse under cold running water or plunge into an ice bath for 30 seconds. Drain thoroughly.

Season and Serve

    Toss with oil and seasonings

    While still slightly warm, transfer drained edamame to a bowl. Drizzle 1 tablespoon toasted sesame oil over the pods, sprinkle 1 teaspoon freshly ground black pepper and the optional 1/4 teaspoon red pepper flakes. Toss to coat evenly so seasoning adheres to the pods.

    Adjust salt and finish

    Taste a bean or two and sprinkle additional coarse sea salt as desired for finishing — start with a small pinch per serving. If using, squeeze fresh lemon juice from a wedge over the edamame for brightness.

    Serve

    Serve warm or at room temperature. To eat, pop the beans from the pods into your mouth and discard pods.
