    In a saucepan, bring the vegetable broth to a simmer. Keep it warm over low heat.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped shallots and sauté until translucent, about 2-3 minutes. Add the minced garlic and cook for an additional minute.

    Cook the Mushrooms

    Add the wild mushrooms to the skillet and sauté until they are tender and browned, about 5-7 minutes. Season with salt and black pepper.

    Stir in the Arborio rice and cook for 1-2 minutes, allowing the rice to absorb the flavors.

    Incorporate the Broth

    Gradually add the warm vegetable broth, one ladle at a time, stirring continuously. Allow the rice to absorb most of the liquid before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

    Once the rice is cooked, stir in the grated Parmesan cheese and adjust seasoning with salt and black pepper. Remove from heat.
