1. Prepare the Romesco Sauce

In a blender, combine roasted red peppers, almonds, garlic, red wine vinegar, smoked paprika, and olive oil. Blend until smooth. Adjust seasoning with salt and pepper to taste.

2. Marinate the Lamb

In a bowl, mix the olive oil, salt, and black pepper. Rub the mixture all over the lamb lollipops and let them marinate for at least 30 minutes.

3. Grill the Lamb Lollipops

Preheat the grill to medium-high heat. Grill the lamb lollipops for about 3-4 minutes on each side for medium-rare, or until your desired doneness is reached.

4. Grill the Shishito Peppers

Toss the shishito peppers in a little olive oil and sprinkle with salt. Grill them for 2-3 minutes until they are blistered and slightly charred.

5. Serve

Plate the grilled lamb lollipops with the grilled shishito peppers and drizzle with the romesco sauce.
