Method

Prepare the Citrus Spiced Salmon

    Marinate the Salmon

    In a bowl, mix olive oil, citrus zest, paprika, garlic powder, salt, and black pepper. Coat the salmon fillets in the marinade and let sit for at least 15 minutes.

    Cook the Salmon

    Preheat the grill or a skillet over medium-high heat. Cook the salmon for about 4-5 minutes on each side, or until cooked to your liking. Sprinkle with fresh parsley before serving.

Make the Green Pea Puree

    Blend the Peas

    In a saucepan, bring water to a boil and add the frozen peas. Cook for 2-3 minutes, then drain. Transfer to a blender, add olive oil, lemon juice, and salt. Blend until smooth.

Prepare the Lemon Scented Orzo

    In a saucepan, bring vegetable broth to a boil. Add orzo pasta and cook according to package instructions. Once cooked, stir in lemon zest, salt, and black pepper.

Make the Green Pea Salad

    In a bowl, mix fresh green peas, cherry tomatoes, cucumber, olive oil, lemon juice, salt, and black pepper. Toss gently to combine.
