Preheat your oven to 375°F (190°C). Cut the pears in half and remove the cores. Place them on a baking sheet with the cut side facing up.

Roast the Pears
Roast the pears in the preheated oven for about 15-20 minutes, or until they are tender and slightly caramelized.

Prepare the Walnuts
While the pears are roasting, toast the chopped walnuts in a dry skillet over medium heat for about 5-7 minutes, stirring frequently, until fragrant and golden.

In a small bowl, whisk together 3 tablespoons of champagne vinegar, 1 tablespoon of Dijon mustard, and 4 tablespoons of olive oil. Season with salt and pepper to taste.

In a large bowl, combine the baby field greens, warm roasted pears, toasted walnuts, crumbled blue cheese, and crumbled Millionaires Bacon.
