Prepare the Salmon

Preheat your grill to medium-high heat. Coat the salmon filets with olive oil, and season with salt, black pepper, and paprika.

Grill the Salmon

Place the salmon filets on the grill skin-side down. Grill for about 6-8 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

Prepare the Tomato Grits

In a saucepan, bring 2 cups of water to a boil. Stir in the tomato grits and diced tomatoes. Add chili powder and cook according to package instructions until creamy.

Make the Spicy Mango Salsa

Dice the mango and combine it with lime juice, chopped cilantro, and honey in a bowl. Mix well and set aside.

Prepare the Three Pepper Slaw

In a bowl, combine the three pepper slaw mix with a drizzle of olive oil, salt, and pepper to taste. Toss to combine.

Serve

Plate the grilled salmon with a side of spicy tomato grits, three pepper slaw, and top with spicy mango salsa.
