    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Wash and pierce the Russet potatoes with a fork. Bake them in the oven for about 45-60 minutes or until they are tender.

    Prepare the Filling

    While the potatoes are baking, cook the bacon until crispy. Remove from heat, chop it into small pieces, and set aside. Chop the green onions, separating the green tops from the white parts.

    Scoop and Mix

    Once the potatoes are done, let them cool slightly. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a small border so the skins stay intact. Add sour cream, butter, shredded cheddar cheese, bacon pieces, white parts of the green onions, garlic powder, salt, and pepper to the bowl. Mix until well combined.

    Refill and Bake Again

    Spoon the potato mixture back into the potato skins, mounding it on top. Place the filled potatoes back on a baking sheet. Bake for an additional 15-20 minutes at 350°F (175°C) until heated through and slightly golden on top.

    Garnish and Serve

    Remove the twice-baked potatoes from the oven and sprinkle with the green tops of the green onions. Serve warm as a side dish or appetizer.
