Prepare the Grits
In a medium saucepan, bring water to a boil. Add grits, salt, and cayenne pepper. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened. Stir in heavy cream and tomato sauce, and keep warm.

Cook the Shrimp
In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for 1 minute. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes. Remove shrimp from skillet and set aside.

Make the Sauce
In the same skillet, add white wine and bring to a simmer. Add fresh spinach and cook until wilted. Stir in remaining heavy cream and let simmer for about 5 minutes until slightly thickened.

Combine and Serve
Place a generous portion of the spicy tomato grits on each plate, top with sautéed shrimp, and drizzle with creamy white wine and spinach sauce. Garnish with sliced green onions.
