Shrimp Enchiladas Preparation

    Prepare the Shrimp Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until the onion is translucent. Add the shrimp, cumin, salt, and black pepper. Cook until the shrimp turns pink, about 3-5 minutes. Stir in the diced green chilies and remove from heat.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). In a large bowl, combine the shrimp mixture with 1 cup of shredded cheese. Take a tortilla, spoon some of the shrimp filling along the center, roll it up, and place it seam side down in a greased baking dish. Repeat with remaining tortillas.

    Prepare the Sour Cream Sauce

    In a separate bowl, mix together the sour cream and cream of mushroom soup until smooth. Pour the sauce over the assembled enchiladas, ensuring they are well coated. Sprinkle the remaining cheese on top.

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
