Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form the Crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Make the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sweetened condensed milk and mix until combined. Add the key lime juice and egg yolks, mixing until smooth.

Bake the Pie
Pour the filling into the cooled crust and bake for 15 minutes. Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours.

Prepare the Ganache
In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the semisweet chocolate chips. Let sit for a minute, then stir until smooth.

Assemble the Pie
Once the pie is chilled, pour the chocolate ganache over the top, spreading it evenly. Return to the refrigerator for another 30-60 minutes to set the ganache.

Slice the pie, top with whipped cream, and garnish with lime zest before serving.
