    Prepare the Potatoes

    Wash and cube the potatoes. Boil them in salted water until tender, about 10-15 minutes. Drain and set aside.

    Caramelize the Onions

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Slice the onion and add to the skillet. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.

    Grill the Chicken

    Season the chicken breasts with salt and pepper. Preheat a grill or grill pan over medium-high heat. Add 2 tablespoons of olive oil to the grill. Grill the chicken for 6-7 minutes on each side or until fully cooked and juices run clear.

    Prepare the Capers Potatoes

    In a bowl, mix the boiled potatoes with the capers, remaining olive oil, salt, and pepper to taste. Toss to combine.

    On each plate, place a serving of the capers potatoes, top with a grilled chicken breast, add caramelized onions, and a slice of brie cheese. Let the cheese melt slightly.

    In the same skillet used for the onions, add the fresh vegetables and sauté for 5-7 minutes until tender. Season with salt and pepper.
