    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are golden brown and caramelized, about 25-30 minutes.

    Add Liquid Ingredients

    Pour in the white wine, scraping the bottom of the pot to deglaze. Let it simmer for about 5 minutes until reduced slightly.

    Combine Broth and Seasonings

    Add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.

    Prepare Toppings

    While the soup is simmering, preheat the oven to 400°F (200°C). Cut the French bread into cubes and spread them on a baking sheet. Toast in the oven for about 10 minutes until golden.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into bowls, top with toasted bread cubes, and sprinkle generously with Gruyère and Parmesan cheese.

    Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown. Serve hot.
