    Prepare the Base

    In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and garlic, and sauté until the vegetables are soft, about 5 minutes.

    Add Potatoes and Wine

    Stir in the diced potatoes and white wine. Cook for another 5 minutes, allowing the wine to reduce slightly.

    Add Seafood Stock

    Pour in the seafood stock, add the thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.

    Add Clams and Cream

    Stir in the clams and heavy cream. Cook for an additional 5 minutes, making sure to heat through without boiling.

    Final Seasoning

    Taste the chowder and adjust seasonings as necessary. Remove the bay leaf before serving.

    Ladle the clam chowder into bowls and serve hot with slices of sourdough baguette.
