    Prepare the Chocolate Mixture

    In a saucepan over medium heat, combine the heavy cream and chopped dark chocolate. Stir until the chocolate is melted and the mixture is smooth. Remove from heat and stir in the vanilla extract.

    Mix Egg Yolks

    In a separate bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and slightly thick.

    Combine Mixtures

    Slowly pour the warm chocolate mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling.

    Prepare Ramekins

    Preheat your oven to 325°F (160°C). Pour the chocolate mixture into ramekins, filling them about 3/4 full.

    Bake

    Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.

    Cool and Chill

    Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 2 hours or overnight.

    Caramelize the Sugar

    Before serving, sprinkle a thin layer of brown sugar over the top of each crème brûlée. Use a kitchen torch to caramelize the sugar until it forms a crispy shell.
