Cooking Instructions

1

Prepare the Chicken

Season the chicken breasts with salt and black pepper. Dredge each breast in flour, shaking off the excess.

2

Cook the Chicken

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

3

Make the Sauce

In the same skillet, add the shallots and cook for about 2 minutes until softened. Add the lemon juice and capers, scraping up any browned bits from the bottom of the skillet. Reduce the heat and stir in the remaining 2 tablespoons of butter until melted.

4

Combine and Serve

Return the chicken to the skillet and coat it in the sauce. Cook for an additional minute. Meanwhile, cook the pasta according to package instructions. Drain the pasta and toss it with the remaining butter. Serve the chicken over the pasta, topped with the sauce, chopped parsley, and grated Parmesan cheese.
