    Prepare Noodles

    Soak the rice noodles in warm water for about 30 minutes or until soft. Drain and set aside.

    Cook Tofu

    In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the cubed tofu and cook until golden brown, about 5-7 minutes. Remove the tofu and set aside.

    Scramble Eggs

    In the same skillet, add the remaining tablespoon of oil and minced garlic. Sauté for 30 seconds. Crack the eggs into the skillet and scramble until fully cooked.

    Combine Ingredients

    Add the soaked rice noodles, cooked tofu, soy sauce, fish sauce, brown sugar, and chili powder to the skillet. Toss everything together over medium heat until heated through, about 3-5 minutes.

    Add Vegetables

    Add the bean sprouts and green onions to the skillet. Toss for another 2 minutes until the vegetables are tender.

    Serve the Pad Thai hot, garnished with crushed peanuts and lime wedges on the side.
