    Prepare the Noodles

    In a pot of boiling water, cook the mei fun noodles according to package instructions. Drain and set aside.

    Stir-Fry the Vegetables

    In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.

    Add the julienned carrots and sliced bell peppers to the skillet. Stir-fry for 2-3 minutes until they start to soften.
