Rice Base

Spices and Seasonings

Method

Cooking the Rice

  1. 1

    Prepare the Rice

In a medium saucepan, combine the long-grain white rice, water, and salt. Bring to a boil over high heat.

  2. 2

    Simmer the Rice

Once boiling, reduce the heat to low, cover with a lid, and let it simmer for about 18-20 minutes or until the rice is tender and all the water is absorbed.

  3. 3

    Fluff the Rice

Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork before serving.

Cooking the Proteins

  1. 4

    Cook Ground Beef and Chorizo

In a large skillet over medium heat, add the ground beef and chorizo sausage. Cook until browned, breaking up the meat with a spatula, about 8-10 minutes.

  2. 5

    Add Vegetables

Add the diced bell pepper, onion, and jalapeño (if using) to the skillet. Cook for an additional 5 minutes until the vegetables are softened.

  3. 6

    Season the Mixture

Stir in the cumin, chili powder, garlic powder, black pepper, and paprika. Mix well and cook for another 2-3 minutes to allow the flavors to meld.

  4. 7

    Add Black Beans and Corn

Stir in the black beans and corn. Cook until heated through, about 3-5 minutes.

Assembling the Platter

  1. 8

    Layer the Rice

Spoon the fluffy rice onto a large serving platter as the base.

  2. 9

    Top with Protein Mixture

Evenly distribute the cooked beef and chorizo mixture over the rice.

  3. 10

    Garnish

Sprinkle chopped cilantro, and drizzle lime juice over the top. Add dollops of sour cream and sprinkle shredded cheese for garnish.
