Prepare the Chimichurri Sauce
In a food processor, combine the fresh parsley, garlic cloves, red wine vinegar, olive oil, oregano, red pepper flakes, salt, and black pepper.

Blend the Ingredients
Pulse the food processor until the mixture is well combined but still slightly chunky. Taste and adjust seasoning if necessary.

Transfer to a Bowl
Transfer the chimichurri sauce to a serving bowl and let it sit at room temperature for at least 30 minutes to allow the flavors to meld.

Prepare the Steak
Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes before cooking.

Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers.
