Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 0.5 teaspoons of salt. Whisk together until well mixed.

  2. 2

    Incorporate Shortening

Add 1 tablespoon of shortening or lard to the dry mixture. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually pour in 0.75 cups of warm water. Stir with a fork until the dough begins to come together.

  4. 4

    Knead Dough

Transfer the dough to a floured surface and knead for about 2-3 minutes until smooth. Form the dough into a ball and cover it with a cloth. Let it rest for about 30 minutes.

Frying

  1. 5

    Heat Oil

In a deep skillet or frying pan, heat 4 cups of vegetable oil over medium-high heat until it reaches 375°F (190°C).

  2. 6

    Roll Out Dough

After the dough has rested, roll it out on a floured surface to about 1/8 inch thick. Cut into squares or triangles, about 3-4 inches in size.

  3. 7

    Fry Sopapillas

Carefully place the cut dough into the hot oil. Fry until they puff up and turn golden brown, about 1-2 minutes per side. Remove with a slotted spoon and drain on paper towels.

Serving

  1. 8

    Serve Warm

Serve the sopapillas warm, drizzled with honey and sprinkled with cinnamon sugar to taste.
