Chicken Preparation

Marinate the Chicken
In a bowl, mix the buffalo sauce, truffle oil, smoked paprika, garlic powder, salt, and black pepper. Add the chicken breasts and coat them well. Cover and refrigerate for at least 30 minutes.

Smoke the Chicken
Preheat your smoker to 225°F (107°C). Place the marinated chicken breasts on the smoker rack. Smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Remove from the smoker and let rest for 10 minutes before slicing.

Prepare Avocado Ranch
In a blender, combine ripe avocados, Greek yogurt, buttermilk, fresh cilantro, garlic powder, onion powder, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Melt the Queso
In a saucepan over low heat, combine Velveeta cheese, cream cheese, diced tomatoes with green chilies, and jalapeños. Stir continuously until melted and smooth. Remove from heat and mix in shredded cheddar cheese until well combined.

On a plate, layer the smoked chicken slices, add a generous dollop of avocado ranch, and drizzle with queso. Serve with fresh lettuce leaves and sliced avocado on the side.
