Cooking the Rice

    Prepare the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of brown rice, stir once, and reduce the heat to low. Cover and simmer for 45-50 minutes or until the rice is tender and the water is absorbed.

    Fluff the Rice

    Once cooked, remove the saucepan from heat and let it sit, covered, for 10 minutes. Then, fluff the rice with a fork.

Assembling the Bowl

    Layer the Ingredients

    In a serving bowl, add a generous portion of the fluffed brown rice as the base.

    Add Cheese

    Top the rice with 1 cup of shredded cheddar cheese. Let it sit for a minute to allow the cheese to melt slightly.

    Add Queso

    Pour 1 cup of queso dip over the melted cheddar cheese for added creaminess and flavor.

Finishing Touches

    Garnish the Bowl

    Sprinkle 0.25 cup of chopped fresh cilantro and 0.25 cup of chopped green onions over the top for a fresh finish.
