Prepare Gelatin
In a small bowl, sprinkle the gelatin powder over the 3 tablespoons of cold water and let it sit for about 5 minutes until it blooms.

Heat Cream and Sugar
In a saucepan over medium heat, combine the heavy cream, whole milk, and 1 cup of granulated sugar. Stir until the sugar has dissolved and the mixture is hot, but not boiling.

Add Gelatin and Vanilla
Remove the saucepan from heat. Add the bloomed gelatin and vanilla extract. Stir until the gelatin is fully dissolved.

Pour into Molds
Pour the mixture into individual serving molds or cups. Allow to cool at room temperature for about 30 minutes, then refrigerate for at least 4 hours or until set.
Berry Sauce

Prepare Berry Sauce
In a saucepan over medium heat, combine the mixed berries, 4 tablespoons of granulated sugar, and lemon juice. Cook, stirring gently, until the berries break down and the mixture thickens slightly, about 10 minutes.

Cool the Sauce
Remove from heat and let the sauce cool. You can strain it if you prefer a smoother sauce.

Serve
Once the panna cotta has set, carefully unmold it onto plates and drizzle the berry sauce on top before serving.
