Preparation and Cooking
- 1
Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to resemble fries.
- 2
Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes for crispier fries.
- 3
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.
- 4
Fry the Potatoes
Remove the soaked potatoes from the water and pat them dry with paper towels. Carefully add the fries to the hot oil in batches, frying for about 4-6 minutes or until golden brown and crispy. Remove them with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- 5
Season the Fries
While the fries are still hot, sprinkle them with salt to taste.
- 6
Assemble Montezuma Fries
On a large serving platter, layer the fries. Top with shredded cheddar cheese, sliced jalapeños, and chopped green onions. Drizzle sour cream and guacamole over the top before serving.
