    Prepare the Vegetables

    Dice the bell pepper and onion. Finely chop the jalapeño and mince the garlic.

    Mix the Cheese Filling

    In a medium bowl, combine Monterey Jack cheese, cheddar cheese, and cream cheese. Mix until well combined.

    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced bell pepper, onion, jalapeño, and minced garlic. Sauté for about 5-7 minutes until the vegetables are soft.

Assembling the Quesadilla
