Preparing the Pork

    Season the Pork

    Rub the pork shoulder with salt and black pepper evenly on all sides.

    Marinate the Pork

    In a bowl, combine the mojo marinade ingredients (garlic, lime juice, orange juice, olive oil, cilantro, cumin, oregano). Pour the marinade over the pork, ensuring it is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Roast the Pork

    Place the marinated pork shoulder in a roasting pan with the remaining marinade. Cover the pan with aluminum foil and roast in the preheated oven for about 4 to 5 hours, or until the pork is tender and easily pulls apart.

    Once cooked, remove the pork from the oven and let it rest for 15 minutes. Shred the pork using two forks, mixing it with the remaining juices in the pan.
