Marinating the Pork

    Prepare the Marinade

    In a large bowl, combine minced garlic, cumin, chili powder, oregano, salt, black pepper, olive oil, and lime juice. Mix well to form a marinade.

    Marinate the Pork

    Place the pork shoulder in a large resealable bag or container. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the container and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Sear the Pork

    Preheat your oven to 300°F (150°C). Heat a large oven-safe pot or Dutch oven over medium-high heat. Remove the pork from the marinade, reserving the marinade, and sear the pork on all sides until browned, about 5-7 minutes.

    Once the pork is browned, remove it from the pot. Add chopped onions to the pot and sauté until softened, about 3-4 minutes. Return the pork to the pot, add the reserved marinade, chicken broth, and bay leaves.

    Cover the pot with a lid and transfer it to the preheated oven. Cook for about 4 hours, or until the pork is tender and easily shredded with a fork.

Serving the Pulled Pork
