Base Preparation

Heat the Dairy
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks, granulated sugar, and salt until the mixture becomes pale and slightly thickened.

Cook the Mixture
Return the mixture to the saucepan and cook over medium heat, stirring constantly with a wooden spoon until the mixture thickens enough to coat the back of the spoon (about 170°F or 77°C).

Add Vanilla
Remove from heat and stir in the vanilla extract. Allow the base to cool to room temperature.

Chill the Base
Cover the mixture and refrigerate for at least 4 hours or overnight to chill completely.
Flavoring and Churning

Choose Your Flavor
Once the base is chilled, divide the mixture into separate bowls based on the number of flavors you wish to create.

Add Flavoring Ingredients
In each bowl, add the desired flavoring ingredients. For chocolate gelato, mix in the chocolate syrup; for strawberry, add the pureed strawberries; for coffee, stir in the brewed coffee; and for pistachio, fold in the chopped pistachios.

Churn the Gelato
Pour each flavored mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Freeze Until Firm
Transfer the gelato to airtight containers and freeze for at least 4 hours or until firm.
