For the Fried Chicken Bites

Prepare the Chicken
Cut the boneless chicken breasts into bite-sized pieces, approximately 1-inch cubes.

Set Up Breading Station
In three separate bowls, set up your breading station: one with flour mixed with salt, pepper, garlic powder, and paprika; the second with beaten eggs and milk; and the third with cornstarch.

Bread the Chicken
Dredge each chicken piece first in the flour mixture, then dip it in the egg mixture, and finally coat it with cornstarch. Make sure each piece is well-coated.

Heat Oil
In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken Bites
Carefully add the coated chicken pieces to the hot oil in batches, frying for about 4-5 minutes or until golden brown and cooked through. Use a slotted spoon to remove them and drain on paper towels.

Mix the Base
In a mixing bowl, combine the cream cheese and sour cream until smooth and creamy.

Add Cheese and Salsa
Stir in the shredded cheddar cheese, green salsa, and diced jalapeño until well combined.

Season the Dip
Add lime juice, chopped cilantro, and salt to taste, mixing well to incorporate all ingredients.

Serve
Transfer the dip to a serving bowl and serve alongside the fried chicken bites and ketchup for dipping.
